For the Lemongrass Ginger Syrup: Add all ingredients to a stainless steel pot. Bring to a boil, then lower to a very light simmer for 5 minutes. Remove from heat and pulse in a blender. Do not overblend; just use quick pulses.
Strain through a fine-mesh strainer and cool the syrup in the refrigerator until it’s room temperature.
For the POM Lemongrass Ginger Punch: Add the vodka, POM Juice, lemongrass ginger syrup, and lime juice into a shaker filled with ice. Shake and strain over a glass filled with ice.
Top with club soda and add 1 tablespoon of POM Arils into the glass.

½ oz. fresh ginger, peeled and sliced
1 cup sugar
1 cup water

2 oz. vodka
2 oz. POM Wonderful 100% Pomegranate Juice
1 oz. lemongrass ginger syrup
½ tablespoon fresh lime juice
Club soda
POM Wonderful Pomegranate Fresh Arils, for garnish
