Cut sweet potato into 1" cubes. Place on a lined baking sheet and drizzle with 2 tablespoons olive oil. Bake for 15 minutes, turning occasionally.
For the POM-cider vinaigrette: In a small bowl, whisk together POM Wonderful 100% Pomegranate Juice, apple cider vinegar, honey, salt, pepper, and cinnamon. Slowly whisk in olive oil.
In a medium bowl arrange piles of sweet potato, farro, squash, arugula, radicchio, POM Wonderful Pomegranate Arils, and goat cheese. Drizzle with POM-cider vinaigrette.
