Preparation

  1. Preheat oven to 400°F.
  2. Cut sweet potato into 1" cubes. Place on a lined baking sheet and drizzle with 2 tablespoons olive oil. Bake for 15 minutes, turning occasionally.
  3. For the POM-cider vinaigrette: In a small bowl, whisk together POM Wonderful 100% Pomegranate Juice, apple cider vinegar, honey, salt, pepper, and cinnamon. Slowly whisk in olive oil.
  4. In a medium bowl arrange piles of sweet potato, farro, squash, arugula, radicchio, POM Wonderful Pomegranate Arils, and goat cheese. Drizzle with POM-cider vinaigrette.

Farro bowl:

  • ½ cup POM Wonderful Pomegranate Arils
  • 1 small sweet potato
  • 3 tablespoons olive oil, divided
  • 1 cup cooked farro
  • 1 yellow squash, thinly sliced
  • 1 cup arugula
  • ½ cup chopped radicchio
  • 2 ounces goat cheese, crumbled

POM-cider vinaigrette:

  • ½ cup POM Wonderful 100% Pomegranate Juice
  • 1 tablespoon apple cider vinegar
  • ½ tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon olive oil
