In a small saucepan over medium-high heat, simmer the POM Juice until the mixture is reduced to 2 tablespoons and slightly syrupy. Stir in 1 tablespoon of honey and set aside to cool.
In a mixing bowl, combine the goat cheese, cream cheese, remaining 2 tablespoons of honey, salt, and coriander. With a hand mixer, mix until smooth and creamy.
In a separate medium mixing bowl, combine the POM Arils, jalapeño, scallions, and cilantro.
Spread the whipped goat cheese in a shallow dish or on a platter and top with the POM relish. Garnish with more cilantro and drizzle with the cooled POM Juice syrup. Serve with crackers or endive leaves.
