In a cocktail shaker without ice, combine the gin, POM Juice, simple syrup, yuzu (or lime) juice, and egg white (or aquafaba). Shake the ingredients vigorously until foamy, about 1 minute.
Add ice to the shaker and shake another 30 seconds, until chilled.
Strain into a coupe glass and add a few dashes of bitters. Garnish with POM Arils.
