Add pomegranate syrup, toasted walnut-infused bourbon, orange bitters, and POM Wonderful 100% Pomegranate Juice into a cocktail mixing glass with ice and stir until chilled.
Strain into a chilled rocks glass over a large ice cube.
Express the citrus oils from an orange peel and discard. Garnish with a walnut.
* Pomegranate Syrup:
Add POM Wonderful 100% Pomegranate Juice and sugar into a small saucepan and bring to a simmer until sugar dissolves.
Let cool. Can be stored in an airtight container in the fridge for up to 2 weeks.
** Toasted Walnut Infused Bourbon:
Preheat the oven to 325°F degrees and lay the walnuts in a single layer on a sheet tray.
Toast in the oven until fragrant and golden brown, about 8- to 10 minutes.
Set them aside and let cool. Add the toasted walnuts and bourbon to a jar and let it sit for 24 hours in a cool, dark place.
Strain the bourbon through a damp coffee filter-lined sieve into a clean jar.
