Quenching and sprightly, this seasonal tonic makes a great tableside companion. The sweetness of the pomegranates and apples balances the hint of bitter from the tonic, while the lemon and cayenne pepper give the drink a surprise savory endnote with a lingering soft heat. Pairs well with: Artisan flatbread crackers topped with spicy jam and tart-crisp apple slices, or a lacinato kale salad tossed with pomegranate arils and roasted pistachios.
In a highball (tall) glass, combine first three ingredients and stir briskly. Add ice, then slowly top with tonic water. Garnish with a dusting of cayenne pepper across the top.
