Preheat oven to 400°F. Line a baking sheet with parchment paper. Add carrots and asparagus to baking sheet; drizzle evenly with olive oil and salt. Roast vegetables for 30 minutes, tossing occasionally.
For the POM Dijon vinaigrette: In a small bowl, combine Dijon mustard and POM Wonderful 100% Pomegranate Juice. Whisk in olive oil; set aside.
Add vegetables to a serving dish. Garnish with POM Wonderful Pomegranate Arils and drizzle with POM Dijon vinaigrette.
