For the Ginger Simple Syrup: In a small saucepan over medium heat, combine ½ cup water, ½ cup granulated sugar, and 1 tablespoon fresh sliced ginger. Heat until boiling; reduce to low and simmer for 15 minutes or until thickened. Remove the saucepan from heat and allow to cool.
Using a fine-mesh strainer or cheesecloth, strain out the ginger. Save the remaining simple syrup in a glass bottle or mason jar in the refrigerator for up to two weeks.
For the POM Ginger Bourbon Smash: In a cocktail shaker, combine the bourbon, POM Juice, lemon juice, ginger simple syrup, and ice. Shake vigorously.
Strain into a glass filled with ice. Garnish with POM Wonderful Pomegranate Arils and a sprig of rosemary.
